Not sure if we understood correctly, but assuming you'd like to have BITalino recording data in standalone mode, without the need to have a computer or mobile phone, you have two options:
1) To use a third-party device such as an Arduino or Raspberry Pi to acquire and record the data, in which case the third-party device can control the acquisition on BITalino, receive and decode the data, and then store it in a memory card
2) Find an off-the-shelve or create your own custom-built memory card module, could would trigger the data acquisition process in BITalino and record the data.
In either case you'd have to disconnect the Bluetooth module, either by snapping it off or cutting the lines on the PCB, in order to free the UART pins, which would in turn be the interface to use to interface BITalino with your approach of choics.
